1.Preheat the oven to 200°C (400°F).

2.In a large bowl, combine the cubed potatoes, vegetable oil, cumin powder, turmeric powder, coriander powder, salt, and black pepper. Toss until the potatoes are evenly coated with the spices.

3.Spread the potatoes in a single layer on a baking sheet and roast in the preheated oven for 25-30 minutes, or until golden brown and crispy.
