Preparation

1.Soak the dried mogettes (or white beans) in water overnight.

2.In a large pot, place the soaked mogettes, chopped onions, minced garlic, bay leaves, and thyme sprigs.

3.Add enough water to cover the mogettes and bring to a boil. Reduce heat and simmer for about 1 hour or until the mogettes are tender.

4.In a separate pot, place the cured and smoked ham and cover with water. Bring to a boil, then reduce heat and simmer for about 1 hour or until the ham is tender.

5.Once the ham is cooked, remove it from the pot and let it rest for a few minutes. Slice the ham into thick slices.

6.Serve the sliced ham alongside the creamy mogettes. Season with salt and pepper to taste.
