Treat your ingredients with care...

  • Basmati rice — Rinse the rice thoroughly to remove excess starch and achieve fluffy grains.
  • Saffron threads — Soak the saffron in hot water to release its vibrant color and delicate flavor.
  • Dried apricots — Chop the apricots into small pieces for even distribution throughout the pilaf.
  • Vegetable broth — Use a high-quality vegetable broth to enhance the overall flavor of the dish.
  • Fresh cilantro or parsley — Use either herb for garnish based on personal preference.

Tips & Tricks

  • For added richness, you can toast the basmati rice in the pot with a little oil before adding the spices and broth.
  • If you prefer a sweeter pilaf, you can add a tablespoon of honey or maple syrup to the rice along with the dried apricots.
  • Feel free to customize the spice blend by adding a pinch of ground cloves or nutmeg for extra warmth and complexity.
  • To make the dish more substantial, you can add toasted slivered almonds or pine nuts to the pilaf before serving.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop.
