Preparation

1.Preheat the oven to 180°C (350°F).

2.In a large skillet, cook the bacon until crispy. Remove the bacon from the skillet and set aside.

3.In the same skillet, melt 2 tablespoons of butter and sauté the onions until caramelized. Remove the onions from the skillet and set aside.

4.In the same skillet, melt the remaining 2 tablespoons of butter and sauté the mushrooms until golden brown. Remove the mushrooms from the skillet and set aside.

5.In a saucepan, melt the remaining butter over medium heat. Stir in the flour to create a roux. Cook for 2 minutes, stirring constantly.

6.Gradually whisk in the milk until the mixture thickens. Season with salt and pepper.

7.In a greased baking dish, layer half of the sliced potatoes. Top with half of the bacon, caramelized onions, sautéed mushrooms, and grated Gruyère cheese. Pour half of the milk mixture over the layers.

8.Repeat the layers with the remaining ingredients, finishing with a layer of potatoes on top. Pour the remaining milk mixture over the top layer.

9.Cover the baking dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
