Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the diced bacon and cook until crispy. Remove the bacon from the pot and set aside.

2.In the same pot, add the beef and pork cubes. Season with salt and pepper. Brown the meat on all sides until nicely seared. Remove the meat from the pot and set aside.

4.Return the meat to the pot and add the potatoes, carrots, turnip, bay leaves, and dried thyme. Pour in the beef or vegetable broth, ensuring that the ingredients are fully submerged.

5.Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for about 2 hours, or until the meat is tender and the vegetables are cooked through.

6.Remove the bay leaves from the pot. Stir in the chopped fresh parsley and adjust the seasoning with salt and pepper if needed.
