Preparation

1.Rinse the adzuki beans and place them in a saucepan. Add enough water to cover the beans and bring to a boil. Reduce the heat and simmer for 1 hour or until the beans are soft.

2.Drain the cooked beans and transfer them back to the saucepan. Add sugar and cook over low heat, stirring constantly, until the mixture thickens and becomes a smooth paste. Remove from heat and stir in vanilla extract. Let the red bean paste cool completely.

3.In a mixing bowl, combine glutinous rice flour, salt, and water. Mix well until a smooth dough forms.

4.Divide the dough into small portions and shape each portion into an oval disc.

5.Take one disc of rice cake dough and flatten it with your fingers. Place a spoonful of red bean paste in the center and fold the dough over to enclose the filling. Pinch the edges to seal the rice cake.
