Preparation

    In a large bowl, combine the masa harina, chicken broth, vegetable oil, baking powder, and salt. Mix well until a soft dough forms. Set aside.

    In a separate pan, heat some oil over medium heat. Add the onions, garlic, carrots, and bell peppers. Sauté until the vegetables are tender.

    Add the shredded pork, cooked red beans, cumin, oregano, paprika, salt, and pepper to the pan. Stir well to combine and cook for an additional 5 minutes. Remove from heat and let the filling cool.

    Take a piece of banana leaf and place a spoonful of the masa dough in the center. Flatten the dough slightly and add a spoonful of the filling on top.

    Fold the banana leaf over the filling, creating a neat rectangular package. Secure with kitchen twine or a strip of banana leaf.

    Repeat the process with the remaining masa dough and filling.
