Treat your ingredients with care...

  • Sticky rice — Make sure to rinse the sticky rice thoroughly to remove excess starch before soaking it. This will help achieve the desired texture of the rice cake.
  • Dried shiitake mushrooms — Soaking the mushrooms in warm water helps rehydrate them and enhances their flavor. Be sure to remove the stems before using.
  • Dried shrimp — Rinse the dried shrimp under cold water to remove any impurities before using. Soaking them in warm water helps soften them and brings out their natural umami flavor.

Tips & Tricks

  • For added flavor, you can marinate the dried shrimp and mushrooms in the soy sauce mixture for 15 minutes before adding them to the rice.
  • Customize the recipe by adding other vegetables such as peas, corn, or diced bell peppers.
  • To achieve a crispier texture, pan-fry the sliced rice cake in a little oil until golden brown on both sides.
  • Leftover rice cake can be stored in the refrigerator for up to 3 days. Reheat it by steaming or pan-frying.
