Preparation

  1. 1.
In a large mixing bowl, combine the flour and salt for the dough. Make a well in the center and add the olive oil and water. Mix until a smooth dough forms. Cover and let it rest for 30 minutes.
  2. 2.
In a separate bowl, combine the Swiss chard, ricotta cheese, onion, parsley, marjoram, nutmeg, salt, and pepper for the filling. Mix well until all the ingredients are evenly incorporated.
  3. 3.
On a lightly floured surface, roll out the dough to a thickness of about 1/8 inch. Cut the dough into small squares or circles, approximately 3 inches in diameter.
  4. 4.
Place a spoonful of the filling in the center of each dough square. Fold the dough over to form a triangle and seal the edges by pressing them together firmly.
  5. 5.
In a deep pan or fryer, heat vegetable oil to 350°F (180°C). Carefully place the Barbagiuan in the hot oil and fry until golden brown on both sides, about 3-4 minutes per side. Remove from the oil and drain on paper towels.
  6. 6.
Serve the Monégasque Barbagiuan warm as an appetizer or part of a light meal. Enjoy!
