1.Drain and rinse the soaked barbunya beans.

2.In a large pot, heat olive oil over medium heat. Add the onions and garlic, and sauté until translucent.

3.Add the bell peppers and zucchini to the pot, and cook for 5 minutes until slightly softened.

4.Stir in the diced tomatoes, tomato paste, paprika, cumin, dried oregano, lemon zest, salt, and pepper. Cook for another 2 minutes.

5.Add the drained barbunya beans to the pot and pour enough water to cover the beans.

6.Bring the mixture to a boil, then reduce the heat to low and simmer for about 45 minutes to 1 hour, or until the beans are tender.

7.Once cooked, remove from heat and let it cool to room temperature.
