Treat your ingredients with care...

  • Squid — Make sure to clean the squid thoroughly, removing the innards and the transparent cartilage. To achieve tender squid, cook it quickly over high heat or slowly simmer it over low heat. Overcooking can result in rubbery texture.

Tips & Tricks

  • For a spicier version, add a pinch of cayenne pepper or chili flakes to the marinade.
  • Serve the calamares encebollados with a squeeze of fresh lemon juice for an extra burst of citrus flavor.
  • If you prefer a thicker sauce, you can add a tablespoon of flour to the caramelized onions before adding the squid.

Serving advice

Serve the calamares encebollados hot, accompanied by crusty bread or steamed rice. The bread or rice can be used to soak up the delicious onion sauce.

Presentation advice

Arrange the golden brown squid rings on a plate and spoon the caramelized onion sauce over them. Garnish with fresh parsley for a pop of color.
