Preparation
-
1.In a large mixing bowl, combine the flour, yeast, granulated sugar, and salt.
-
2.Add the warm milk, melted butter, and egg to the dry ingredients. Mix until a soft dough forms.
-
3.Knead the dough on a lightly floured surface for about 5 minutes, until it becomes smooth and elastic.
-
4.Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
-
5.Punch down the dough and roll it out into a rectangle shape, about 1/4 inch thick.
-
6.In a small bowl, mix together the brown sugar and ground cinnamon. Sprinkle this mixture evenly over the dough.
-
7.Scatter the currants over the cinnamon-sugar mixture.
-
8.Starting from one long side, tightly roll up the dough into a log shape.
-
9.Cut the log into 12 equal slices and place them in a greased baking dish, leaving a little space between each bun.
-
10.Cover the baking dish with a kitchen towel and let the buns rise for another 30 minutes.
-
11.Preheat the oven to 180°C (350°F).
-
12.Bake the buns for 20-25 minutes, or until golden brown.
-
13.While the buns are baking, prepare the glaze by combining the granulated sugar and water in a small saucepan. Heat over medium heat until the sugar dissolves and the mixture thickens slightly.
-
14.Remove the buns from the oven and immediately brush the glaze over the top of each bun.
-
15.Allow the buns to cool slightly before serving.
Treat your ingredients with care...
- Currants — If you can't find currants, you can substitute them with raisins or sultanas. Make sure to soak them in warm water for a few minutes before using to plump them up.
Tips & Tricks
- For an extra indulgent twist, drizzle a cream cheese glaze over the buns once they have cooled.
- If you prefer a less sweet version, reduce the amount of brown sugar and cinnamon in the filling.
- These buns are best enjoyed warm, so reheat them in the oven for a few minutes before serving if they have cooled down.
- Serve the Chelsea Buns with a cup of English breakfast tea for a truly authentic experience.
- To make the buns ahead of time, you can freeze them after baking. Just thaw and reheat when ready to serve.
