1.Preheat the oven to 180°C (350°F).

2.In a large oven-safe pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.

3.Season the chicken thighs with salt and pepper. In the same pot with the bacon fat, brown the chicken thighs on both sides until golden. Remove the chicken and set aside.

4.In the same pot, add the diced onion, minced garlic, sliced carrots, and mushrooms. Sauté until the vegetables are slightly softened.

5.Sprinkle the flour over the vegetables and stir well to coat.

6.Pour in the red wine and chicken broth, stirring to combine. Add the thyme sprigs and bay leaves.

7.Return the chicken and bacon to the pot, ensuring they are submerged in the liquid.

8.Cover the pot and transfer it to the preheated oven. Bake for 1 hour or until the chicken is tender and cooked through.

9.Remove the pot from the oven and discard the thyme sprigs and bay leaves. Adjust the seasoning with salt and pepper if needed.
