1.Heat the vegetable oil in a large skillet or Dutch oven over medium heat.

2.Add the chicken thighs and cook until browned on all sides. Remove the chicken from the skillet and set aside.

3.In the same skillet, add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened and fragrant.

4.Add the curry powder, cumin, paprika, dried thyme, salt, black pepper, and cayenne pepper (if using) to the skillet. Stir well to coat the vegetables with the spices.

5.Return the chicken thighs to the skillet and add the minced chipotle peppers, raisins, dried apricots, diced tomatoes, and chicken broth. Stir to combine.

6.Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and let it cook for about 30 minutes, or until the chicken is cooked through and tender.
