Preparation

  1. 1.
In a large mixing bowl, combine the flour, softened butter, brown sugar (or grated piloncillo), salt, cinnamon, and vanilla extract. Mix until the ingredients are well incorporated.
  2. 2.
Gradually add the water to the mixture, a little at a time, while continuing to mix. The dough should come together and form a smooth ball. If the dough feels too dry, add a little more water, a tablespoon at a time.
  3. 3.
Divide the dough into 8 equal portions and shape each portion into a ball. Place the dough balls on a baking sheet lined with parchment paper and flatten them slightly with the palm of your hand.
  4. 4.
Preheat the oven to 180°C (350°F).
  5. 5.
Take one flattened dough ball and place a spoonful of the filling in the center. Fold the dough over the filling, pressing the edges together to seal. Repeat with the remaining dough balls and filling.
  6. 6.
Place the filled Coyotas back on the baking sheet and gently press them down to flatten them slightly.
  7. 7.
Bake the Coyotas in the preheated oven for 20-25 minutes, or until they turn golden brown.
  8. 8.
Remove from the oven and let them cool on a wire rack before serving.

Treat your ingredients with care...

  • Butter — Make sure the butter is softened at room temperature before using it in the dough. This will ensure easier mixing and a smoother texture.

Tips & Tricks

  • For a more authentic flavor, use piloncillo instead of brown sugar. Piloncillo can be found in Latin American grocery stores or online.
  • Experiment with different fillings such as dulce de leche, fruit preserves, or even chocolate for a unique twist.
  • Serve the Coyotas warm with a scoop of vanilla ice cream for an indulgent dessert.
  • If you prefer a softer texture, reduce the baking time by a few minutes.
  • Store the cooled Coyotas in an airtight container to maintain their crispiness.

Serving advice

Serve the Coyotas as a delightful dessert or snack. They are best enjoyed warm, straight from the oven. Pair them with a cup of Mexican hot chocolate or a freshly brewed coffee for a perfect combination of flavors.

Presentation advice

Arrange the Coyotas on a serving platter, allowing their golden brown color to shine. Dust them with a sprinkle of powdered sugar for an elegant touch. You can also drizzle a caramel sauce over the top for added sweetness and visual appeal.
