Preparation
-
1.Mash the boiled potatoes until smooth and set aside.
-
2.In a large skillet, cook the diced bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
-
3.In the same skillet, sauté the chopped onion and minced garlic until golden and fragrant.
-
4.Add the mashed potatoes, cooked bacon, chopped parsley, chopped chives, salt, black pepper, and nutmeg to the skillet. Mix well until all the ingredients are evenly combined.
-
5.Gradually add the flour to the potato mixture, stirring continuously until the dough comes together and is no longer sticky.
-
6.Shape the dough into small dumplings, about the size of a golf ball.
-
7.In a separate skillet, melt the butter over medium heat. Add the breadcrumbs and toast them until golden brown.
-
8.Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water and cook for about 10 minutes, or until they float to the surface.
-
9.Using a slotted spoon, remove the cooked dumplings from the water and transfer them to the skillet with the toasted breadcrumbs. Gently toss the dumplings in the breadcrumbs until they are coated.
-
10.Serve the Austrian Potato Dumplings with a Twist hot, garnished with additional chopped parsley and chives if desired.

Tips & Tricks
- To make the dumplings even more flavorful, you can add a pinch of smoked paprika or grated cheese to the dough.
- If you prefer a vegetarian version, you can omit the bacon and use vegetable broth instead of water for boiling the dumplings.
- Serve the dumplings with a dollop of sour cream or a side of sauerkraut for a traditional Austrian touch.
- Leftover dumplings can be pan-fried in butter for a delicious breakfast or snack.
- For a festive twist, you can shape the dumplings into small hearts or other fun shapes using cookie cutters.
