Preparation

  1. 1.
Mash the boiled potatoes until smooth and set aside.
  2. 2.
In a large skillet, cook the diced bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
  3. 3.
In the same skillet, sauté the chopped onion and minced garlic until golden and fragrant.
  4. 4.
Add the mashed potatoes, cooked bacon, chopped parsley, chopped chives, salt, black pepper, and nutmeg to the skillet. Mix well until all the ingredients are evenly combined.
  5. 5.
Gradually add the flour to the potato mixture, stirring continuously until the dough comes together and is no longer sticky.
  6. 6.
Shape the dough into small dumplings, about the size of a golf ball.
  7. 7.
In a separate skillet, melt the butter over medium heat. Add the breadcrumbs and toast them until golden brown.
  8. 8.
Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water and cook for about 10 minutes, or until they float to the surface.
  9. 9.
Using a slotted spoon, remove the cooked dumplings from the water and transfer them to the skillet with the toasted breadcrumbs. Gently toss the dumplings in the breadcrumbs until they are coated.
  10. 10.
Serve the Austrian Potato Dumplings with a Twist hot, garnished with additional chopped parsley and chives if desired.

Treat your ingredients with care...

  • Potatoes — Make sure to use starchy potatoes like Russet or Yukon Gold for the best texture.
  • Bacon — Opt for smoky bacon to add a rich flavor to the dumplings.
  • Fresh herbs — Using fresh parsley and chives will enhance the taste and aroma of the dish.

Tips & Tricks

  • To make the dumplings even more flavorful, you can add a pinch of smoked paprika or grated cheese to the dough.
  • If you prefer a vegetarian version, you can omit the bacon and use vegetable broth instead of water for boiling the dumplings.
  • Serve the dumplings with a dollop of sour cream or a side of sauerkraut for a traditional Austrian touch.
  • Leftover dumplings can be pan-fried in butter for a delicious breakfast or snack.
  • For a festive twist, you can shape the dumplings into small hearts or other fun shapes using cookie cutters.
