Preparation
-
1.Heat the olive oil in a large pot over medium heat. Add the beef chunks and cook until browned on all sides. Remove the beef from the pot and set aside.
-
2.In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent.
-
3.Add the sliced carrots, diced potatoes, and diced red bell pepper to the pot. Cook for a few minutes until the vegetables start to soften.
-
4.Return the beef to the pot and add the cumin, paprika, dried oregano, and bay leaf. Stir well to coat the ingredients with the spices.
-
5.Pour in the beef broth and season with salt and pepper to taste. Bring the stew to a boil, then reduce the heat to low and let it simmer for about 1 hour, or until the beef is tender and the flavors have melded together.
-
6.Remove the bay leaf from the pot. Serve the Guiso Popó with a Twist hot, garnished with fresh parsley.
Treat your ingredients with care...
- Beef — Choose a tender cut of beef, such as chuck or stew meat, for the best results. Trim any excess fat before cooking.
- Fresh parsley — Add the fresh parsley just before serving to preserve its vibrant color and fresh flavor.
Tips & Tricks
- For an extra burst of flavor, marinate the beef chunks in a mixture of olive oil, garlic, and spices for a few hours before cooking.
- If you prefer a thicker stew, you can mix a tablespoon of cornstarch with a little water and add it to the pot during the last few minutes of cooking.
