Preparation

1.In a large non-stick pan, melt the ghee over medium heat.

2.Add the grated carrots to the pan and sauté for 5 minutes, stirring occasionally.

3.Reduce the heat to low and cover the pan. Let the carrots cook for 20 minutes, or until they become soft and tender.

4.Add the sugar, ground cardamom, and soaked saffron to the pan. Mix well until the sugar is dissolved.

5.Cook the mixture over low heat, stirring continuously, for another 15-20 minutes, or until the halva thickens and starts to come together.

6.Remove the pan from heat and let the halva cool slightly.
