1.Heat the vegetable oil in a large skillet or wok over medium-high heat.

4.Push the vegetables to one side of the skillet and add the minced garlic and grated ginger to the other side. Cook for 1 minute until fragrant.

5.In a small bowl, whisk together the soy sauce, mirin, and dashi broth. Pour the sauce into the skillet and bring to a simmer.

6.Return the cooked chicken to the skillet and toss everything together to coat in the sauce. Cook for an additional 2-3 minutes until heated through.
