Preparation

1.Preheat the oven to 180°C (350°F).

2.In a small saucepan, combine the soy sauce, mirin, and sugar. Heat over medium heat until the sugar has dissolved and the mixture has slightly thickened. Set aside.

3.Trim the roots of the enoki mushrooms and separate them into small bundles.
