Preparation

  1. 1.
Place the eggs in a saucepan and cover them with water. Bring the water to a boil over medium heat and let the eggs cook for 7 minutes.
  2. 2.
While the eggs are cooking, prepare an ice bath by filling a large bowl with cold water and ice cubes.
  3. 3.
Once the eggs are cooked, carefully transfer them to the ice bath and let them cool for 5 minutes.
  4. 4.
In a separate saucepan, combine the soy sauce, mirin, sugar, minced garlic, and grated ginger. Bring the mixture to a simmer over medium heat, stirring until the sugar has dissolved. Remove from heat and let the marinade cool.
  5. 5.
Gently tap the cooled eggs on a hard surface to crack the shells, then return them to the ice bath for another 5 minutes.
  6. 6.
Peel the eggs, making sure to keep them intact.
  7. 7.
Place the peeled eggs in a container and pour the cooled marinade over them, ensuring they are fully submerged. Cover the container and refrigerate for at least 4 hours, or overnight for best results.
  8. 8.
When ready to serve, remove the eggs from the marinade and slice them in half lengthwise. Garnish with chopped green onions and serve as desired.

Treat your ingredients with care...

  • Soy sauce — Opt for a high-quality soy sauce to ensure the best flavor. Light soy sauce works well in this recipe.
  • Mirin — If you don't have mirin, you can substitute it with a combination of rice vinegar and a pinch of sugar.
  • Garlic and ginger — Freshly minced garlic and grated ginger provide the best flavor. Adjust the amount according to your preference.
  • Green onion — Use both the green and white parts of the onion for added flavor and visual appeal.

Tips & Tricks

  • For a stronger flavor, marinate the eggs overnight.
  • Experiment with different toppings such as sesame seeds or chili flakes for added texture and heat.
  • Serve the Soy Eggs as a side dish, in ramen, or on top of a bowl of steamed rice for a complete meal.
  • Adjust the sweetness by adding more or less sugar to the marinade.
  • Make a larger batch of the marinade and store it in the refrigerator for future use.
