Preparation

  1. 1.
In a large mixing bowl, combine the all-purpose flour, rice flour, and salt. Gradually add warm water while stirring until a dough forms.
  2. 2.
Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
  3. 3.
In a separate bowl, mix together the miso paste, diced tofu, chopped shiitake mushrooms, green onions, soy sauce, sesame oil, grated ginger, and black pepper. Set aside.
  4. 4.
Roll out the dough on a floured surface until it is about 1/8 inch thick. Use a round cookie cutter or a glass to cut out circles of dough.
  5. 5.
Place a spoonful of the filling mixture onto each dough circle. Fold the dough in half and seal the edges by pressing them together firmly.
  6. 6.
Heat vegetable oil in a frying pan over medium heat. Fry the dumplings in batches until they are golden brown on both sides.
  7. 7.
Serve the Japanese-style Pierogi hot, garnished with additional sliced green onions and a drizzle of soy sauce.

Treat your ingredients with care...

  • Miso paste — Choose a high-quality miso paste for the best flavor. Adjust the amount according to your taste preference.
  • Tofu — Use firm tofu for this recipe to ensure it holds its shape during cooking.
  • Shiitake mushrooms — If fresh shiitake mushrooms are not available, rehydrate dried shiitake mushrooms in warm water before chopping.

Tips & Tricks
