Preparation

1.In a large mixing bowl, combine the all-purpose flour, rice flour, and salt. Gradually add warm water while stirring until a dough forms.

3.In a separate bowl, mix together the miso paste, diced tofu, chopped shiitake mushrooms, green onions, soy sauce, sesame oil, grated ginger, and black pepper. Set aside.

4.Roll out the dough on a floured surface until it is about 1/8 inch thick. Use a round cookie cutter or a glass to cut out circles of dough.

5.Place a spoonful of the filling mixture onto each dough circle. Fold the dough in half and seal the edges by pressing them together firmly.
