Ingredients
In this Kentucky-style adaptation, we infuse the traditional German Käsespätzle with the flavors of the cuisine of Kentucky. While the original recipe uses Emmental or Gruyère cheese, we incorporate a blend of sharp cheddar and smoked Gouda to add a distinct Southern touch. Additionally, we bake the dish to create a golden crust on top, enhancing the flavors and textures. We alse have the original recipe for Käsespätzle, so you can check it out.

Preparation
-
1.In a large mixing bowl, whisk together the flour, eggs, milk, salt, nutmeg, and black pepper until a smooth batter forms.
-
2.Bring a large pot of salted water to a boil. Using a spätzle maker or a colander with large holes, press the batter through the holes into the boiling water. Cook the spätzle for about 2-3 minutes or until they float to the surface. Remove with a slotted spoon and transfer to a colander to drain.
-
3.Preheat the oven to 375°F (190°C).
-
4.In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until translucent and fragrant.
-
5.Sprinkle the flour over the onions and garlic, stirring constantly for about 1 minute to cook off the raw flour taste.
-
6.Gradually whisk in the milk, ensuring no lumps remain. Cook the sauce until it thickens and coats the back of a spoon.
-
7.Remove the skillet from heat and stir in the shredded cheddar and smoked Gouda cheese until melted and smooth. Season with salt to taste.
-
8.Add the cooked spätzle to the cheese sauce and gently toss until well coated.
-
9.Transfer the mixture to a greased baking dish and spread it evenly. Bake for 20-25 minutes or until the top is golden and bubbly.
-
10.Garnish with fresh parsley and serve hot.
Treat your ingredients with care...
- Spätzle — Ensure the batter is smooth and free of lumps for the best texture. If you don't have a spätzle maker, you can use a colander with large holes to press the batter through.
- Sharp cheddar and smoked Gouda cheese — Opt for high-quality cheeses and shred them yourself for better melting and flavor.
Tips & Tricks
- For a smoky twist, add a dash of liquid smoke to the cheese sauce.
- Customize the dish by adding cooked bacon or diced ham for extra flavor.
- If you prefer a spicier version, sprinkle some cayenne pepper or hot sauce over the finished dish.
- Serve the Cheesy Spätzle with a side of tangy pickles or coleslaw to balance the richness.
- Leftovers can be reheated in the oven or stovetop with a splash of milk to maintain the creamy texture.
