Ingredients

In this Kentucky-style adaptation, we infuse the traditional German Käsespätzle with the flavors of the cuisine of Kentucky. While the original recipe uses Emmental or Gruyère cheese, we incorporate a blend of sharp cheddar and smoked Gouda to add a distinct Southern touch. Additionally, we bake the dish to create a golden crust on top, enhancing the flavors and textures. We alse have the original recipe for Käsespätzle, so you can check it out.

Preparation

  1. 1.
In a large mixing bowl, whisk together the flour, eggs, milk, salt, nutmeg, and black pepper until a smooth batter forms.
  2. 2.
Bring a large pot of salted water to a boil. Using a spätzle maker or a colander with large holes, press the batter through the holes into the boiling water. Cook the spätzle for about 2-3 minutes or until they float to the surface. Remove with a slotted spoon and transfer to a colander to drain.
  3. 3.
Preheat the oven to 375°F (190°C).
  4. 4.
In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until translucent and fragrant.
  5. 5.
Sprinkle the flour over the onions and garlic, stirring constantly for about 1 minute to cook off the raw flour taste.
  6. 6.
Gradually whisk in the milk, ensuring no lumps remain. Cook the sauce until it thickens and coats the back of a spoon.
  7. 7.
Remove the skillet from heat and stir in the shredded cheddar and smoked Gouda cheese until melted and smooth. Season with salt to taste.
  8. 8.
Add the cooked spätzle to the cheese sauce and gently toss until well coated.
  9. 9.
Transfer the mixture to a greased baking dish and spread it evenly. Bake for 20-25 minutes or until the top is golden and bubbly.
  10. 10.
Garnish with fresh parsley and serve hot.

Treat your ingredients with care...

  • Spätzle — Ensure the batter is smooth and free of lumps for the best texture. If you don't have a spätzle maker, you can use a colander with large holes to press the batter through.
  • Sharp cheddar and smoked Gouda cheese — Opt for high-quality cheeses and shred them yourself for better melting and flavor.

Tips & Tricks

  • For a smoky twist, add a dash of liquid smoke to the cheese sauce.
  • Customize the dish by adding cooked bacon or diced ham for extra flavor.
  • If you prefer a spicier version, sprinkle some cayenne pepper or hot sauce over the finished dish.
  • Serve the Cheesy Spätzle with a side of tangy pickles or coleslaw to balance the richness.
  • Leftovers can be reheated in the oven or stovetop with a splash of milk to maintain the creamy texture.
