Preparation

  1. 1.
In a large mixing bowl, combine the flour and salt. Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  2. 2.
Add the sour cream and vanilla extract to the mixture. Mix until the dough comes together. If the dough is too dry, add a little more sour cream.
  3. 3.
Divide the dough into two equal portions and shape each portion into a disk. Wrap them in plastic wrap and refrigerate for at least 1 hour.
  4. 4.
Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  5. 5.
Take one portion of the dough out of the refrigerator and roll it out on a lightly floured surface into a circle about 1/8 inch thick.
  6. 6.
Cut the dough into triangles and place a small amount of filling at the wide end of each triangle.
  7. 7.
Starting from the wide end, roll the dough towards the pointed end, forming a crescent shape. Repeat with the remaining dough and filling.
  8. 8.
Place the Kiflis on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
  9. 9.
Allow the Kiflis to cool slightly before dusting them with powdered sugar. Serve and enjoy!

Treat your ingredients with care...

  • Butter — Make sure the butter is cold and cubed to achieve a flaky texture in the dough.
  • Sour cream — If you prefer a tangier flavor, you can use Greek yogurt as a substitute for sour cream.

Tips & Tricks

  • For a sweeter version, sprinkle the Kiflis with cinnamon sugar before baking.
  • Experiment with different fillings such as apricot jam, poppy seed paste, or even Nutella.
  • To achieve a flakier texture, make sure not to overwork the dough.
  • If you prefer a savory version, fill the Kiflis with cheese, ham, or spinach.
  • Serve the Kiflis warm for the best taste and texture.
