1.In a bowl, combine the beef, minced garlic, grated ginger, paprika, cayenne pepper, ground coriander, ground cumin, and salt. Mix well and let it marinate for at least 30 minutes.

2.Heat the vegetable oil in a large skillet or wok over medium-high heat.

3.Add the marinated beef to the skillet and stir-fry until browned and cooked through, about 5-7 minutes.

4.Remove the beef from the skillet and set aside.

5.In the same skillet, add the sliced onion and bell pepper. Stir-fry for 2-3 minutes until slightly softened.

6.Add the diced tomatoes to the skillet and cook for an additional 2 minutes.

7.Return the cooked beef to the skillet and stir-fry for another 2-3 minutes, allowing the flavors to meld together.
