Ingredients

1.Preheat the oven to 200°C (400°F).

2.In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook until caramelized, about 10 minutes. Remove from the skillet and set aside.

3.In the same skillet, cook the merguez sausages until browned and cooked through, about 8-10 minutes. Remove from the skillet and set aside.

4.In the same skillet, add the beef steak slices and cook until browned, about 3-4 minutes. Season with paprika, salt, and pepper.

5.Slice the crusty rolls lengthwise and place 2 slices of provolone cheese on each roll.

6.Place the rolls in the oven and bake until the cheese is melted and bubbly, about 5 minutes.

7.Meanwhile, toss the sweet potato fries with olive oil, paprika, salt, and pepper. Spread them in a single layer on a baking sheet and bake for 20-25 minutes, or until crispy and golden brown.

8.Assemble the merguez cheesesteaks by placing the cooked beef steak slices, caramelized onions, and merguez sausages on the rolls. Serve with the sweet potato fries on the side.
