Preparation

  1. 1.
Preheat the oven to 200°C (400°F).
  2. 2.
In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook until caramelized, about 10 minutes. Remove from the skillet and set aside.
  3. 3.
In the same skillet, cook the merguez sausages until browned and cooked through, about 8-10 minutes. Remove from the skillet and set aside.
  4. 4.
In the same skillet, add the beef steak slices and cook until browned, about 3-4 minutes. Season with paprika, salt, and pepper.
  5. 5.
Slice the crusty rolls lengthwise and place 2 slices of provolone cheese on each roll.
  6. 6.
Place the rolls in the oven and bake until the cheese is melted and bubbly, about 5 minutes.
  7. 7.
Meanwhile, toss the sweet potato fries with olive oil, paprika, salt, and pepper. Spread them in a single layer on a baking sheet and bake for 20-25 minutes, or until crispy and golden brown.
  8. 8.
Assemble the merguez cheesesteaks by placing the cooked beef steak slices, caramelized onions, and merguez sausages on the rolls. Serve with the sweet potato fries on the side.

Treat your ingredients with care...

  • Merguez sausages — If you can't find merguez sausages, you can substitute with spicy Italian sausages for a similar flavor profile.
  • Sweet potatoes — Make sure to cut the sweet potato fries into evenly sized pieces to ensure they cook evenly and become crispy.

Tips & Tricks

  • For an extra kick of heat, add some sliced jalapenos or hot sauce to the cheesesteak.
  • If you prefer a milder flavor, you can use a milder cheese such as cheddar instead of provolone.
  • Don't overcrowd the sweet potato fries on the baking sheet, as this can prevent them from becoming crispy.

Serving advice

Serve the Merguez Cheesesteak with Sweet Potato Fries hot, allowing the cheese to melt over the meat and onions. Accompany it with a side of ketchup or your favorite dipping sauce for the sweet potato fries.

Presentation advice

To enhance the presentation, you can garnish the plate with a sprinkle of chopped fresh parsley or cilantro. Serve the sandwich open-faced to showcase the colorful layers of meat, onions, and melted cheese.
