Preparation

1.Rinse the red lentils under cold water until the water runs clear.

2.In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.

3.Add the berbere spice blend, ground cumin, paprika, and turmeric to the pot. Stir well to coat the onions and garlic with the spices.

4.Add the rinsed lentils, vegetable broth, and water to the pot. Stir to combine all the ingredients.

5.Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for about 25-30 minutes, or until the lentils are tender and the stew has thickened.
