Ingredients
In this Bangladeshi adaptation, we incorporate Bangladeshi spices such as cumin, coriander, turmeric, and garam masala to infuse the dish with the distinct flavors of the region. Additionally, we use local lentil varieties commonly found in Bangladesh, such as masoor dal (red lentils) or musurir dal (split red lentils), to give the dish a unique texture and taste. Preparation

1.Rinse the lentils thoroughly under cold water until the water runs clear.

2.In a large saucepan, bring the water to a boil and add the lentils. Cook over medium heat for about 15-20 minutes or until the lentils are tender.

3.In a separate pan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

4.Add the cumin powder, coriander powder, turmeric powder, and garam masala to the pan. Stir well to combine the spices with the onions and garlic.

5.Add the diced tomatoes to the pan and cook until they soften and release their juices.

6.Transfer the cooked lentils to the pan with the spiced tomato mixture. Stir well to combine all the ingredients.

7.Season with salt to taste and simmer for an additional 5-10 minutes to allow the flavors to meld together.

8.Garnish with fresh cilantro and serve hot with steamed rice or warm naan bread.
