1.In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.

2.In the same pot, add the diced onion, sliced carrots, sliced celery, diced potatoes, minced garlic, dried thyme, and bay leaves. Sauté for 5 minutes, or until the vegetables are slightly softened.

3.Return the browned beef stew meat to the pot. Pour in the beef broth and season with salt and pepper to taste.

4.Bring the soup to a boil, then reduce the heat to low. Cover the pot and simmer for 1 to 1.5 hours, or until the beef is tender and the flavors have melded together.

5.Remove the bay leaves from the soup. Serve the Hearty Beef and Vegetable Soup hot, garnished with fresh parsley.
