Preparation

1.Rinse the basmati rice and short-grain rice under cold water until the water runs clear. Drain well.

2.In a large pot, melt the ghee over medium heat. Add the cinnamon and cardamom and cook for 1 minute until fragrant.

3.Add the rinsed rice to the pot and stir well to coat the grains with the spices and ghee.

4.Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15 minutes.

5.After 15 minutes, gently stir in the whole dates and chopped dates. Cover the pot again and continue to simmer for an additional 10 minutes or until the rice is tender and the dates are soft.

6.Remove the pot from the heat and let it sit, covered, for 5 minutes to allow the flavors to meld.

7.Fluff the rice with a fork and drizzle the saffron water over the top. Mix gently to distribute the saffron evenly.
