Preparation

  1. 1.
Rinse the glutinous rice under cold water until the water runs clear. Drain well.
  2. 2.
Cook the rice according to the package instructions, using slightly less water than usual to achieve a stickier texture.
  3. 3.
In a saucepan, combine the sugar, soy sauce, and mirin. Heat over medium heat until the sugar has dissolved completely.
  4. 4.
Add the cooked rice to the saucepan and mix well to coat the rice evenly with the syrup.
  5. 5.
If desired, divide the mixture into separate bowls and add flavorings such as matcha powder or sesame seeds. Mix well.
  6. 6.
Line a baking sheet with parchment paper and spread the rice mixture evenly onto it, pressing it down firmly.
  7. 7.
Allow the mixture to cool and harden for at least 2 hours.
  8. 8.
Once hardened, cut the Okoshi into desired shapes and sizes.
  9. 9.
    Serve and enjoy!
