Preparation

1.In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and diced bell pepper. Sauté until the vegetables are softened and lightly browned.

2.Add the diced tomatoes, sliced carrots, and cubed potatoes to the pot. Stir in the tomato paste, Pepián spice blend, ground cumin, dried oregano, smoked paprika, salt, and black pepper. Cook for a few minutes to allow the flavors to meld together.

3.Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low and add the chicken pieces to the pot. Cover and simmer for about 30 minutes, or until the chicken is cooked through and tender.

4.Meanwhile, in a dry skillet over medium heat, toast the pumpkin seeds, sesame seeds, peanuts, almonds, and dried guajillo chili peppers until fragrant and lightly browned. Remove from heat and let cool.
