Preparation

1.In a bowl, combine the achiote paste, Greek yogurt, lemon juice, ground cumin, salt, and black pepper to make the marinade.

2.Place the chicken breasts in a shallow dish and pour the marinade over them. Ensure the chicken is evenly coated. Cover the dish and refrigerate for at least 1 hour, allowing the flavors to meld.

3.Preheat the grill to medium-high heat.

4.Remove the chicken from the marinade and discard any excess marinade. Grill the chicken for about 6-8 minutes per side, or until cooked through and nicely charred.

5.While the chicken is grilling, prepare the Guatemalan salsa by combining the diced tomatoes, chopped red onion, fresh cilantro, and lime juice in a bowl. Mix well and set aside.

6.Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Slice the chicken breasts into thin strips.
