Preparation

1.In a large mixing bowl, combine grated carrots, grated potatoes, mashed peas, ground nuts, breadcrumbs, ginger paste, garlic paste, garam masala, red chili powder, and salt. Mix well until all the ingredients are evenly combined.

2.Shape the mixture into small balls and set aside.

3.Heat oil in a deep pan or kadai over medium heat. Once the oil is hot, carefully drop the vegetable balls into the oil and fry until golden brown and crispy. Remove the koftas from the oil and drain on a paper towel-lined plate.

4.In a separate pan, heat oil over medium heat. Add the chopped onions and sauté until golden brown.

5.Add ginger paste and garlic paste to the pan and cook for a minute until fragrant.

6.Add the tomato puree and cook until the oil separates from the mixture.

7.Add cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a couple of minutes.

8.Reduce the heat to low and add the heavy cream. Stir well to combine.

9.Gently place the fried vegetable koftas into the curry sauce and simmer for 5-7 minutes, allowing the koftas to absorb the flavors.

10.Garnish with fresh cilantro and serve hot with rice or naan bread.
