Preparation

1.In a large saucepan, heat some oil over medium heat.

2.Add the mustard seeds and cumin seeds. Cook until they start to sizzle and pop.

3.Add the chopped onion, garlic, ginger, and red chili pepper. Sauté until the onion becomes translucent.

4.Stir in the turmeric powder and paprika, and cook for another minute.

5.Add the diced mangoes, white vinegar, brown sugar, and salt. Stir well to combine.

6.Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 45 minutes, or until the chutney thickens.

7.Remove from heat and let it cool completely before transferring to sterilized jars.
