Ingredients
In this Tanzanian adaptation, we have incorporated local spices and flavors to give the dish a distinct Tanzanian twist. The marinade includes traditional Tanzanian spices such as cardamom and cloves, which add a warm and aromatic touch to the dish. Additionally, we have added a hint of coconut milk to the marinade, which lends a creamy and slightly sweet flavor to the anchovies. 1.In a bowl, combine the minced garlic, chopped chili peppers, lime juice, coconut milk, ground cardamom, ground cloves, and salt. Mix well to create the marinade.

2.Add the cleaned and deboned anchovies to the marinade. Ensure that the fish is well coated with the marinade. Let it marinate for at least 30 minutes, or up to 2 hours for more intense flavors.

4.Thread the marinated anchovies, bell peppers, and onions onto the soaked wooden skewers, alternating between the ingredients.
