Preparation

1.In a large mixing bowl, combine the flour, yeast, sugar, salt, cumin, coriander, and harissa paste for the brioche dough.

2.In a separate bowl, whisk together the eggs. Gradually add the eggs to the dry ingredients, mixing well after each addition.

3.Once the dough starts to come together, transfer it to a lightly floured surface and knead for about 10 minutes until smooth and elastic.

4.Gradually incorporate the softened butter into the dough, kneading until it is fully absorbed and the dough becomes soft and pliable.

5.Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

6.While the dough is rising, prepare the saucisson filling. In a skillet, cook the ground beef and lamb over medium heat until browned. Add the chopped onion, minced garlic, cumin, coriander, harissa paste, salt, and pepper. Cook until the onion is softened and the flavors are well combined. Remove from heat and let it cool.

7.Once the dough has risen, punch it down to release any air bubbles. Divide the dough into two equal portions.

8.Roll out one portion of the dough into a rectangle shape, about 1/4 inch thick. Spread half of the saucisson filling evenly over the dough, leaving a small border around the edges.

9.Roll the dough tightly, starting from one of the longer sides, to form a log. Repeat with the remaining dough and filling.

10.Place the two logs side by side on a baking sheet lined with parchment paper. Cover with a clean kitchen towel and let them rise for another 30 minutes.

11.Preheat the oven to 180°C (350°F).

12.Bake the saucisson brioche for 30-35 minutes or until golden brown and cooked through.
