Preparation

  1. 1.
In a large mixing bowl, combine the all-purpose flour, whole wheat flour, granulated sugar, yeast, salt, ground anise seeds, cinnamon, and nutmeg.
  2. 2.
In a separate bowl, whisk together the warm milk, orange blossom water, olive oil, eggs, and orange zest.
  3. 3.
Make a well in the center of the dry ingredients and pour in the wet mixture. Mix until a dough forms.
  4. 4.
Transfer the dough to a lightly floured surface and knead for about 10 minutes, or until the dough becomes smooth and elastic.
  5. 5.
Gradually incorporate the softened butter into the dough, kneading until it is fully absorbed.
  6. 6.
Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  7. 7.
Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  8. 8.
Punch down the dough to release any air bubbles and divide it into 12 equal portions.
  9. 9.
Shape each portion into an elongated oval, then make three diagonal cuts on one side to resemble a leaf or an ear.
  10. 10.
Place the shaped pastries on the prepared baking sheet, cover with a kitchen towel, and let them rise for another 30 minutes.
  11. 11.
Bake the Gibassier for 15-18 minutes, or until golden brown.
  12. 12.
Remove from the oven and let them cool on a wire rack.
  13. 13.
Once cooled, generously dust the pastries with powdered sugar.

Treat your ingredients with care...
