Preparation

1.In a large pot, heat the olive oil over medium heat. Add the beef cubes and cook until browned on all sides. Remove the beef from the pot and set aside.

2.In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent.

3.Add the carrots, potatoes, celery, bay leaves, paprika, and dried thyme to the pot. Stir well to combine.

4.Return the browned beef to the pot and pour in the beef broth. Season with salt and pepper to taste.

5.Bring the soup to a boil, then reduce the heat to low. Cover the pot and simmer for about 1 hour, or until the beef is tender and the vegetables are cooked through.
