Preparation

    In a large pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent.

    Add the diced tomatoes, roasted red bell peppers, ground cumin, and dried oregano to the pot. Cook for 5 minutes, allowing the flavors to meld together.

    Add the cooked black beans and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 20 minutes.

    Using an immersion blender or a regular blender, puree the soup until smooth. Season with salt and pepper to taste.
