Preparation

1.Heat the olive oil in a large pot or Dutch oven over medium heat.

2.Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.

3.In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.

4.Add the carrots, potatoes, and celery to the pot. Cook for a few minutes until the vegetables start to soften.

5.Return the beef to the pot and add the bay leaves, dried thyme, dried rosemary, paprika, ground cumin, ground coriander, and cayenne pepper (if using). Stir well to coat the beef and vegetables with the spices.
