Preparation

  1. 1.
Preheat the oven to 200°C (400°F).
  2. 2.
In a 9-inch oven-safe skillet, combine the sugar and water. Cook over medium heat until the sugar dissolves and turns golden brown, swirling the pan occasionally.
  3. 3.
Remove the skillet from heat and carefully arrange the apple halves, cut side down, in the caramel.
  4. 4.
Sprinkle the ground cinnamon and cloves evenly over the apples.
  5. 5.
Roll out the puff pastry sheet to fit the size of the skillet. Place the pastry over the apples, tucking in the edges.
  6. 6.
Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crispy.
  7. 7.
Remove from the oven and let it cool for a few minutes.
  8. 8.
Place a serving plate over the skillet and carefully invert the tart onto the plate.
  9. 9.
Serve warm with a generous dollop of kaymak or a scoop of vanilla ice cream.

Treat your ingredients with care...

  • Apples — Choose firm and slightly tart apples such as Granny Smith or Golden Delicious for the best texture and flavor.
  • Puff pastry — Ensure the puff pastry is fully thawed before using to achieve a light and flaky crust.

Tips & Tricks

  • For an extra touch of Turkish flavor, sprinkle some crushed pistachios or drizzle pomegranate molasses over the tart before serving.
  • If you don't have an oven-safe skillet, you can use a regular skillet for caramelizing the sugar and then transfer the caramelized apples to a baking dish before adding the puff pastry.

Serving advice

Serve the Turkish Tarte Tatin warm to fully enjoy the caramelized apples and the flaky puff pastry. Top each slice with a generous spoonful of kaymak or a scoop of vanilla ice cream for a creamy and indulgent experience.

Presentation advice

To enhance the presentation, dust the finished tart with a sprinkle of powdered sugar and garnish with a sprig of fresh mint or a cinnamon stick. The contrast of colors will make it even more visually appealing.
