In the IONA-inspired Tohax, we have adapted the original Armenian dish by incorporating flavors and ingredients commonly found in the cuisines of the Islands of the North Atlantic. The traditional Armenian spices have been replaced with a blend of Atlantic Island spices, which adds a unique twist to the dish. Additionally, we have incorporated local herbs and ingredients that are commonly used in Atlantic Island cuisine to enhance the flavors and create a fusion of tastes. Preparation

1.Preheat the oven to 180°C (350°F).

2.In a small bowl, combine the minced garlic, paprika, dried thyme, dried oregano, ground cumin, sea salt, black pepper, and olive oil to create a marinade.

3.Place the chicken breasts in a baking dish and pour the marinade over them, ensuring they are evenly coated. Let the chicken marinate for at least 30 minutes.

4.Squeeze the juice of one lemon over the marinated chicken.

5.Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 75°C (165°F).

6.Once cooked, remove the chicken from the oven and let it rest for a few minutes.

7.Garnish with fresh parsley and serve hot.
