Preparation

  1. 1.
Peel the potatoes and cut them into thick chips, about 1/2 inch (1.25cm) in width.
  2. 2.
Rinse the chips under cold water to remove excess starch.
  3. 3.
Place the chips in a large pot of salted boiling water and cook for about 8-10 minutes, or until they are just tender but not falling apart.
  4. 4.
Drain the chips and spread them out on a baking sheet lined with paper towels. Allow them to cool completely and dry out for at least 30 minutes.
  5. 5.
Heat vegetable oil in a deep fryer or large, deep pot to 320°F (160°C).
  6. 6.
Fry the chips in batches for about 5 minutes, until they are pale and slightly crispy. Remove them from the oil and let them cool on a wire rack.
  7. 7.
Increase the oil temperature to 375°F (190°C).
  8. 8.
Fry the chips again in batches for about 3-4 minutes, until they are golden brown and crispy.
  9. 9.
Remove the chips from the oil, drain on paper towels, and sprinkle with salt while they are still hot.
  10. 10.
Serve the Triple-Cooked Chips immediately as a delicious side dish or snack.

Treat your ingredients with care...

  • Potatoes — Choose starchy potatoes like Maris Piper or Russet for the best results. Make sure to dry the chips thoroughly after boiling to achieve maximum crispiness.

Tips & Tricks

  • For extra crispy chips, you can freeze the parboiled chips for 1 hour before frying them for the second time.
  • To add a twist of flavor, sprinkle the chips with your favorite seasoning blend before serving.
  • If you don't have a deep fryer, you can use a large, deep pot for frying. Just make sure to monitor the oil temperature carefully.
