Preparation

1.Preheat the oven to 325°F (160°C).

2.In a large bowl, sift the cake flour and 3/4 cup (150g) of granulated sugar together. Set aside.

3.In a separate bowl, beat the egg whites on medium speed until foamy.

4.Add the cream of tartar and salt to the egg whites and continue beating until soft peaks form.

5.Gradually add the remaining 1 cup (200g) of granulated sugar to the egg whites, beating until stiff peaks form.

6.Gently fold in the sifted flour mixture, one-third at a time, using a spatula.

7.Stir in the vanilla extract.

8.Pour the batter into an ungreased angel food cake pan.

9.Bake for 45-50 minutes, or until the top is golden brown and the cake springs back when lightly touched.

10.Remove the cake from the oven and invert the pan onto a cooling rack. Let it cool completely before removing from the pan.
