1.Rinse the rice under cold water until the water runs clear. Drain and set aside.

2.In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.

3.Add the bell peppers and tomato to the skillet, and cook until they start to soften.

4.Stir in the paprika, cumin, dried oregano, and chili powder. Cook for another minute to release the flavors.

5.Add the rice to the skillet and stir to coat it with the spices and vegetables.

6.Pour in 4 cups (950ml) of water and bring to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.

7.While the rice is cooking, season the shrimp with salt, pepper, and lime juice.

8.In a separate skillet, heat a tablespoon of olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque.

9.Once the rice is cooked, gently fold in the cooked shrimp.

10.Garnish with fresh cilantro and serve hot.
