Preparation

    Rinse the wheat grains, barley grains, rice, chickpeas, and white beans under cold water.

    In a large pot, combine the rinsed grains, legumes, and 6 cups (1.5 liters) of water. Bring to a boil over medium heat.

    Reduce the heat to low and simmer for about 1 hour, or until the grains and legumes are tender.

    Add the sugar, rose water, and orange blossom water to the pot. Stir well until the sugar is dissolved.

    Add the dried apricots, raisins, and dried figs to the pot. Cook for an additional 10 minutes, stirring occasionally.

    Remove the pot from the heat and let the mixture cool slightly.

    Stir in the chopped walnuts, almonds, and pistachios.
