1.In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, grated carrots, and celery. Sauté until the vegetables are softened.

3.Pour in the vegetable broth and add the bay leaf and dried marjoram. Bring the soup to a boil, then reduce the heat and simmer for 30 minutes.
