Ingredients
In the original Djiboutian cuisine, awara soup is typically made with awara melon and a variety of vegetables. However, in this Southern African adaptation, we incorporate groundnuts and okra to add depth and texture to the soup. 1.In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until they turn golden brown.

2.Add the diced awara melon, crushed groundnuts, and sliced okra to the pot. Stir well to combine.

3.Sprinkle the ground coriander, cumin, paprika, and turmeric over the ingredients in the pot. Mix thoroughly to coat the vegetables and nuts with the spices.

4.Pour the vegetable broth into the pot and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 30 minutes, or until the vegetables are tender.

5.Season the soup with salt and pepper to taste.

6.Serve the awara soup hot, garnished with fresh cilantro.
