Preparation
-
1.Preheat the oven to 200°C (400°F).
-
2.Wash the potatoes thoroughly and pierce them with a fork. Place them on a baking sheet and bake for about 45-50 minutes, or until tender.
-
3.While the potatoes are baking, heat the vegetable oil in a skillet over medium heat. Add the onions, bell pepper, and garlic, and sauté until they become soft and translucent.
-
4.Add the ground beef to the skillet and cook until browned. Drain any excess fat.
-
5.Stir in the Cajun seasoning, paprika, cayenne pepper, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld together.
-

-
7.Mash the scooped-out potato flesh and combine it with the cooked ground beef mixture.
-
8.Stuff each potato shell with the beef and potato mixture, pressing it down gently.
-
9.Place the stuffed potatoes back on the baking sheet and bake for another 15-20 minutes, or until the tops are golden brown.
-
10.Garnish with chopped green onions and serve hot.
